Moroccan Lamb Meatballs

How to make

Step 1
- Start by adding the lamb mince and remaining meatball ingredients into a bowl (excluding the spray oil) and thoroughly mix together. Form into 18 medium-sized meatballs and add to your air fryer basket (grill or oven would work equally as well). Spray with EVOO spray and air fry for 10 mins at 190 degrees C. Shake them up a little bit after 10 mins, and air fry for a further 3-4 mins until cooked through.

Step 2
For the dressing, add a quarter of the yoghurt to a jug/blender, along with the dried mint, lemon juice, garlic and mint sauce. B
litz together, then add the remaining yoghurt and mix together with a spoon.
Set aside.

Step 3
Cook your rice as per the packet instructions.
Slice 3 salad tomatoes into large pieces, along with some thick chunks of cucumber.
Split the rice between 3 plates, then top with the meatballs.
Add the salad to the side, and finish with a generous drizzle of the mint yoghurt across all 3 plates.
Serve and enjoy!
