Cooking: Griddle/Barbecue Method: Heat a griddle pan over high heat until it’s smoking hot. Lightly brush the cutlets with vegetable oil and season with salt. Grill the cutlets for 3–4 minutes on each side, depending on thickness, for a beautifully pink center. Oven Method: Preheat your oven to 200˚C/gas mark 6.
